Bavaria's best chocolate cake

Mix 10 organic whole eggs with 400 g sugar in a round bowl, I recommend birch sugar for the best taste. Add 280 grams of liquid unsalted butter and mix lightly, as well as 300 ml of liquid chocolate coating.

And this is where opinions differ. I only use Valrhona, Chocolat Noir, Guanaja 70%.

Now, to give the taste an incomparable touch, fold in 200 gr sour cream (with at least 35 % fat) and 400 gr Trinitario Cocoa. Trinitario Cocoa is the result of crossing Criollo and Forastero. These are among the best cocoa varieties in the world.

Bake in a buttered baking tray at 145 degrees for 50 minutes, serve lukewarm with a scoop of bourbon vanilla.
