Marrakech - Morroco

Morrocan beef tajine

Ingredients:

• 800 g beef goulash
• 1 large onion
• 2 tbsp butter
• 2 tbsp vegetable oil
• 0.2 g ground saffron
• 1 tsp freshly ground black pepper
• 1 tsp ground ginger
• 1 tsp cinnamon
• 1 tsp salt
• 1 bunch fresh coriander
• 200 g fresh dates
• 40 g walnuts
• 3 tbsp honey

Preparation:

For the typical Moroccan beef tajine, first peel the onion. Finely dice one half and cut the other half into strips. Stone the dates and cut them in half.

Melt the butter in a small saucepan over a medium heat and then place in a large bowl. Now mix the butter with the oil, pepper, saffron, ginger, salt and half a teaspoon of cinnamon. Then stir in the chopped onions and 5 stalks of coriander. Finally, add the meat and toss in the butter. Leave the meat to marinate for a few minutes and then put it into the tajine. Now place the tajine on the cooker and heat slowly.

Stir-fry the beef lightly over a medium heat. Then add enough water to just cover the meat. Bring the tajine to the boil briefly and let the meat simmer gently, covered, for about 1 hour.

Then add the onion strips and the dates and simmer the beef tajine gently, covered, for another 30 minutes.
Now add the remaining cinnamon powder, honey and walnuts and continue to gently simmer the Moroccan tajine without the lid until the walnuts are soft and the sauce has reduced.

While the tajine continues to simmer in the Moroccan pot, you can now finely chop the remaining coriander. Serve the Moroccan beef dish sprinkled with coriander directly in the tajine.
