FOR 4 PERSONS
Ingredients
• 480 g beef fillet (ideal: matured for 4 weeks)
• 50 g dried tomatoes in oil
• ½ piece shallot
• 1 tbsp tomato paste (alternative: tomato paste)
• 1 tbsp spiced ketchup
• 2-3 tsp olive oil
• 1 pinch sea salt
• 2 pieces of radish
• 4 tbsp mustard seed cooked in vinegar (alternative: n.b. vinegar + pepper)
• 4 tsp caviar
Step 1: Prepare the beef
Cut the beef into small, fine cubes. Finely chop the shallot and also dice the tomatoes. Put everything together in a bowl and mix with tomato paste, ketchup, salt and olive oil.
Step 2: Serve the tartare
Form dumplings with a tablespoon and place one dumpling in the centre of each plate. Drizzle a tablespoon of the vinegar-boiled mustard seed over each and arrange sliced radishes on top.
Step 3: Serve with caviar
Serve the tartare with a teaspoon of caviar.
